Description

Quail are a lovely but very small game bird. Likened to that of a tiny duck the dark flesh is rich and tasty  although a little tricky to deal with due to their size.  I’ve cooked many over the years and absolutely love them often simply spatchcocked and cooked in a skillet over a hot bothy stove, with fresh herbs and a splash of sweet liqueur usually following a day shooting.
