When it comes to value for money these bad-boys are an excellent option. Personally I'd eat these over many other cuts that cost much more. We cut these to 1.5" in thickness and pack them two per pack. The extra thickness allows you to cook to the right temperature without overcooking. We like them still pink in the middle – medium / rare. Another option with the thickness is to make a pocket which can be stuffed with all sorts of variations.
