We use a lot of beef Skirt here, some is left with the skin on where it would traditionally be peeled back, stuffed and sewn up before stewing. We also remove the skin on many skirts to sell through our shops as a stewing beef for those who really know what makes a good pie. Deep robust beefy flavours ooze from this heavily textured beef. Absolutely delicious for making pie fillings or any slow cooked stew.
